Ebru Demir is a Turkish social entrepreneur and chef who was born in 1976. In as much as Ebru Demir was born in Mardin, she was raised in Instanbul.
She had her education at Marmara University and earned a Degree in Tourism in 1999. After completing school, she stayed in Mardin and worked as a tourist guide.
She has been involved in so many projects and campaigns that target women and biodiversity. Ebru Demir teamed up with 21 other women in 2001 to set up a touristic restaurant, Cercis Murat Konağı (Turkish: Cercis Murat Mansion), in Mardin.
Beyond that, she also set up the Zamarot 1890 restaurant in Mardin and for some time now, she has focused on Anatolian cuisine.
As part of her activities geared towards women and biodiversity, Ebru Demir is the founder of the Soil to Plate Agricultural Development Cooperative. She initiated the Biodegradable Waste Management Project from Soil to Soil.
She was at the World Forum on Gastronomy Tourism organized by the United Nations’ World Tourism Organization and represented Turkey. HBO Max also produced a documentary, 12 Zero-Waste Chefs of the World, about Ebru Demir.
Projects such as Kitchen of Hope and Harran Gastronomy School by Ebru Demir have been a source of help for Syrian refugees as well as local women.
Through these projects, Ebru Demir teaches the local women to acquire skills in baking, gardening, farming and mushroom cultivation.
The onset of the earthquake that hit southern and central Turkey on February 6, 2023, caused Ebru Demir to set up a soup kitchen in Hatay.
She received the Basque Culinary World Prize (2023) and the Aenne Burda Creative Leadership Award (2023).
